Thankful Thursdays…So Much Beryl has been fodder for my post topics this week. Even with no power- we have a generator that kept us going. We have our must-have coffee, fridge, microwave, lights, etc.We have plenty of Ethanol-free gas to power the generators. And to re-supply the gas for the generator, we get to go to Buc-ee’s! Thankfully we kept our DVD’ s so we’re having fun watching movies since we have no cable or Internet! We went to Lupe Tortillas so we could be in air conditioning. It was delicious and before we left, our cute waitress asked if we’d like some ice water to go! You can’t have enough cold water when the heat index outs temps in the 100’s. Tiramisu Recipe from my SisterMy sister was a great cook, and after experimenting with multiple Tiramisu recipes created her own years ago. I’ve tried Tiramisu multiple times in Italy and I have to say this is pretty good. I've probably made it a dozen times. 6 egg yolks1 ¼ cup sugar1 ¼ cup mascarpone1 ¾ cup whipping cream1 ¾ cup espresso or regular coffee, preferably strong (room temp)2 TB brandy2 TB rum (white or gold)2 packages of ladyfingers (about 7 oz. each). Some packages are only 3 oz. while some are larger – it depends on the brand. It’s better to have extra rather than not enough. Several years ago I was thoroughly entertained by 3 rough and tumble beer drinking guys at the nail salon!  I had a front row seat to the entire spectacle and OMG I did my best not to laugh - too loud!  I think the guys were from back east somewhere and in town for some sports events.  For some reason they felt the need to get all 'dolled' up for the games.  Hey - more power to them! Carry on boys! My question for you is.....        What color do you think each guy chose? Happy Wednesday!  Now, let's get back out there and show the world our colors!

Prayers to all in this region. Bill  Wordless Wednesday- The Power of Power   There are things we use, need, and cannot do without.  One of those things is power or rather electricity.   We along with 2 million other customers in our area lost power thanks to Beryl. In May of this year we were without power for 4 days. That is small compared to weeks or more  without power after a hurricane in South Florida. On Facebook there is a cute question/ funny comment that goes “How many turn the light switch on when they head to their bathroom even when they have no power?”   Been there-Done that ! We are fortunate to have a generator, but there are many not so lucky. Larry and I walked down our street last night and could hear all of the generators humming…loudly!   Walking into our local groc...

Between medical issues and a little camping trip I got behind on my blogging so I'm writing two posts a day until I get caught up.Although I was dealing with a dog bite injury I decided to go ahead with a planned camping trip. It was a wonderful trip. One concern I had was a nearby lake home owner set off a huge amount of fireworks last year and kept us up. The good news was he scaled it down considerably this year.There was more good news, every day was in the mid 70's, there were very few flying insects, and the lake water was warm enough to swim in. Somethings never get old and one of those things are rocket launches from Cape Canaveral.  I live about 95 miles from the Cape and love walking outside and watching the launches.  I have an app “Space Launch Now” which has some pretty cool features.  First is the “Countdown” that shows the next launch in days, hours and minutes.  Next is “Upcoming Launches” which describes what is scheduled for launch, another feature that is handy they have a live stream so you can watch the countdown and launch and in my case I have maybe 15 to 20 seconds to be in place to view and take pictures.  I have mine set for alerts, so I know when I need to get outside.  Space Launch Now is available on both Apple App Store and Google Play.As a youngster, I remember watching rocket launches from Cape Canavera...

When my sister was a young adult and still living at home she told Mom "I will never have left-overs in my house!". Fifty plus years later I believe she has been true to her word. I'm not sure how she does it. Either she throws away a lot of food or she has portions down to a science. I don't believe she even keeps Thanksgiving or Christmas dinner around after the initial event.It's NOT that way in our house. Fruit Pizza1 pkg Sugar cooked dough (18oz Pillsbury)                    1 Container Cool Whip7 stawberries                                                               2 Kiwis1 BananaSpread Cookie dough on cookie sheet (ungreased).  Cook at 350 for approx 12 minutes or until light golden brown.  Let cool.  Add very thin layer of cool whip on top.  Dice fruit and place over cool whip.  You may use any fruits of your choice.
