Here are some interesting facts about carrots:     Carrots were not always flame colored.  In the 16th century, Dutch scientists crossbred several yellow varieties.  The result was so tasty, that orange carrots became the norm.  Previously, purple, red and yellow had been most popular.   Orange carrots are also rich in beta-carotene, which turns to Vitamin A in your body.   Carrot tops may look pretty, but the greens can actually suck moisture out of the root.  Cut them before you store them in the fridge.    If you peel carrots, you will lose the nutrients in the veggies outer layer.  A good scrub with a veggie brush or your hands is all you need to clean them.   Stick with slender carrots (1 to 1.5 inches in diameter) that are less than 8 inches long.  Larger carrots tend to taste les... 10/11/2014
