  Broccoli & Cheese  2 (16 oz.) packages frozen broccoli florets1/2 cup of butter separated into 2 (1/4 cup) portions1/4 cup flour1/2 tsp. salt, if desired2 1/4 cups milk6 oz. cream cheese1/2 cup chopped onion3/4 cup cup grated Cheddar cheese1/2 cup buttered bread crumbs or Pepperidge Farms herb stuffing Cook broccoli according to package instructions and drain.Melt 1/4 cup butter over low heat in saucepan .Stir in flour and blend.Add milk and continue to heat until sauce thickens, stirring constantly.Add cream cheese and blend until smooth.Add Cheddar cheese and blend.Add onions.Mix in large mixing bowl with broccoli. Spray 9 x 13 inch dish with cooking spray.Pour broccoli mixture into baking dish.Melt remaining 1/4 cup of butter and add stuffing or bread crumbs.Top Casserole.Bake at 3... 10/24/2016

  My wife tells me it's “Canning time”, so for all you that still can here's a recipe we like: Christmas Pickles Use 2 to 3 inch long pickles. Add to each gallon jar: 4 tbsp. salt4 tbsp. alum8 tbsp. pickling spice4 c. vinegar (dark) Wash pickles and pack whole in glass gallon jars. To each jar add the ingredients listed above. Shake the jar to dissolve the ingredients. Fill the remainder of the jar with cold water.    Wheezer's Animal Rescue Foundation will host its first golf outing on Friday September 2nd at Tanglewood Manor Golf Course, 653 Scotland Road Quarryville, PA.  Registration and a continental breakfast will begin at 8 AM, followed by a 9 AM shotgun start.   The Society will present “Along the Scenic Octoraro Creek” Local Quarryville historians and authors Mike Roth and Stanley White will present a pictorial history of the area in and around Lake Octoraro. They will show scenes from before the lake was made. The area has included iron foundries, flour mills, paper mills, saw mills, and farmland.     The annual Youth Basketball Camp was held at Solanco High School last week. The camp was offered to both boys and girls who had completed grades three through eight.  The primary focus of the camp was to provide all campers the opportunity to enhance their basketball skills. The camp provided an environment where each camper could work hard, develop fundamental skills, and have fun.  Most of the instruction was provided at 13 stations. The stations included: shooting, passing, dribbling, speed and agility, defensive and offensive concepts, among others.                                                      Solanco High School: Young players from first to eighth grades took to the field the week of June 20th to learn the basics of field hockey.  The annual camp had 35 players. Helping to coach the camp were 17 members of Solanco High School's field hockey team. The camp included team building activities, tactical skills, and actual hockey games.  On Tuesday the campers wore a “fun” color. Wednesday they dressed in wacky attire.
