So, I was sitting around with a craving for vegetable lasagna...I checked out recipes on the web and came across one from the Pioneer Woman http://thepioneerwoman.com/cooking/2011/04/vegetable-lasagna/ that I modified with what I had on hand...I used the basic recipe, added zuchinni along with the squash, a big bunch of fresh kale (cooked down), some fresh sugar peas that I tossed in at the last minute with the kale, a little more garlic and onion...This is exactly what it looked like before it went in the oven...I swear the dish weighed 10 pounds when I took it out...Check out the recipe, modify it to your liking...You won't be disappointed!   06/19/2012
