Sunrise in Indian Harbour Beach, Florida 2/8/2015: A raccoon got first tracks on the beach this morning.     As the morning sun starts to break through the early morning clouds.     The beach was loaded with sea shells as far as you could see.   I make it a point to always pick up trash off of the beach. It's my way of giving back for being able to enjoy such a beautiful natural environment.     This is  my favorite photo (out of 176) that I took this morning.   Ahh I feel better now.   What a way to start my day!!! Here's something you don't see everyday. Several large Tarpon chasing bait pods of fish onto the beach at sunrise . It was a beautiful sunrise in Indian Harbour Beach, Florida. There were dolphins and large tarpon and all type of fish and sealife everywhere. What a way to start a day!!      George and Shelley contacted me on my website back in 2011. They were interested in a beachside home. We started looking...and even went under contract on a home at the end of 2012 (a beachfront condo...but it was not to be). For those of you who read my posts you will know two things about me...I like to eat, and I like to eat healthy! I am always looking for good alternatives to the mass supermarket two week old veggies and fruits that are paraded to us as organic. Coasters Pub & Biergarten was a nice surprise! Being that I am Colorado girl, I have been looking for a good bison burger ever since I arrived on the Space Coast, heck bison anything! Bison is actually the correct name for what most Americans call buffalo.  Bison is a tasty, healthier alternative to beef.  Pound for pound, bison has less fat and cholesterol than beef...and it is delicious! Most people could not tell the difference if served bison in place of beef.  Back in Colorado, virtually every restaurant that serves beef will offer a bison alternative, which, I chose virtually every chance I got.  Here on the Space Coast, those options just aren't available.  So, this past week, when my mom and I wanted to pick up a bite out, I was floored when we walked up to Coasters Pub & Bierg... 08/04/2014

The Hula Moon Tiki Grill is where I had lunch today and I liked it!  Located at 1900 Hwy A1a in Indian Harbour Beach, the Hula Moon Tiki Grill is situated in the commercial strip mall in front of Lowes right next to Pinetree Drive.  Advertised as a Hawaiian/Polynesian restaurant, the rich dark wood colors are the first thing that you notice when you walk into Hula Moon Tiki Grill.  I have always loved Hawaiian poke, so, when I saw an ahi poke bowl on the menu I had to try it!    Typically poke is made from small cubed pieces of sushi grade fish that is seasoned with sea salt (preferably Hawaiian sea salt), soy sauce, sesame oil, garlic and chili.  At Hula Moon Tiki Grill, the poke is served on topped of a bowl of cooled white rice, and was garnished with tomato, green onion, corn,a man... 07/16/2014

This past week I met a friend at Ferrara's Pizza & Pasta at 276 Eau Gallie Blvd in Indian Harbour Beach.  This little Italian place is located next to Publix and Jade Palace.  I was really looking forward to eating at Ferrara's because my friend had raved about the food there and I had heard other positive comments about it from a couple other people. When I go to an Italian restaurant, my "litmus test" if you will is Eggplant Parmesan.  I absolutely love eggplant, and, if a restaurant has great Eggplant Parmesan, then in my opinion, the restaurant passes the "test".  I have to regretfully say that I was not impressed by either the Eggplant Parmesan nor the side of spaghetti that came with it.  The garlic bread knots that came with the meal were great!  Warm, soft, garlicky and deliciou... 07/13/2014

          We have all heard the phrase       “truth is stranger than fiction”well, that is precisely what happened here on the Space Coast this week!. For the last three weeks, there have been numerous sightings of a shark in the lake at Gleason Park in Indian Harbour Beach.  Bull sharks have the ability to survive in freshwater habitats, which is probably why this animal  survived so long in Gleason Lake. The  lake is not attached in any way to either the Indian River Lagoon or the Atlantic ocean!  so exactly how he got into the lake is a mystery.  But the probability is that someone put him there.                                                            The juvenile bull shark was nicknamed "Sushi" and evaded all attempts to capture it until this morning.   I have seen these recipes online before, and tonight I had everything in the house and decided to try it.  It actually worked, and it wasn't half bad! Microwave Coffee Mug Brownies Ingredients 1/4 cup flour 1/4 cup sugar 2 tablespoons cocoa 1/2 tablespoon instant coffee A pinch of salt A pinch of cinnamon 1/4 cup water 2 tablespoons melted butter 1 or 2 drops vanilla extract     Directions Add the flour, sugar, cocoa, salt, cinnamon, and instant coffee to a microwave-save ceramic mug. Use a fork to mix together and break apart any clumps. Add butter, water, and vanilla to the mug, and stir until the mixture is smoothe. I love pizza, but the calories and carbs makes it one food that I cannot often have.  This recipe for pizza crust made out of cauliflower may be a good alternative when you are looking to cut down on carbs.  It would also be really good for those people that have gluten allergies.  I love pizza,  but I also love cauliflower, this is something I am definately going to try.Cauliflower Pizza CrustIngredients4 cups raw cauliflower rice (about one medium head)1 egg, beaten1/3 cup goat cheese or ricotta cheese1 tsp dried oreganoPinch of saltPinch of cayenne pepper (optional)Directions Preheat the oven to 400 degrees F, then begin to make the cauliflower rice. Hula Moon Tike Grill is a Hawaiian-Polynesian style Tiki Bar recently opened in Indian Harbour Beach, FL it is located in front of the Lowe's on Hwy A1A. The owners of Hula Moon apparently decided to shoot for a slightly less casual version of a traditional tiki bar. It appears they wanted to aim at the business lunch - after work happy hour crowd. Huge central bar, nice semi upscale decor, T.V. sets throughout for the sports crowd...a very nice place to come and relax after a hard day! I am really careful about the food I give my dogs. They get NOTHING from China.  I watched a colleague mourn the death of her dog and beat herself up because the dog died from food she fed her that was from China.  But, doggie treats from premium natural dog food stores are really pricey.   We have quite a few Italian restaurants on the beachside barrier island of the Space Coast. Ferrara is a new entry into the pizza and pasta mix...and a worthwhile addition as well! First things first...Ferrara is located on the corner of Eau Gallie Blvd and South Patrick Dr in Indian Harbour Beach...it is in the Publix Plaza. When you walk into the restaurant it will give you the feel of a NY style Italian restaurant. The decor is as you would expect...dark wood, dark tables, pictures of the Italian countryside hanging on the walls. A word of advice to the owners: get rid of the cheap chairs and put on some table cloths. Now for the food: pretty darn good. I don't know why, but this sounds so incredibly delicious right now! Lime Shrimp and Avocado Salad Ingredients:   1 lb jumbo cooked shrimp, peeled and chopped 1 medium tomato, diced 1 avocado, diced 1 jalapeno, seeds removed, diced fine 1/4 cup chopped red onion 2 limes, juice of 1 tsp olive oil 1 tbsp chopped cilantro salt and fresh pepper to taste   Directions   In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion. In a large bowl combine chopped shrimp, avocado, tomato, jalapeno.
