Whatever floats one's boat works for me.  I have several in varying sizes. For me, it is all about practicality. I am not a fan of wood.  They look good however my concern is bacteria growth and cleaning.

This is what my cutting board looks like.  I'm a huge fan of Boos, brand.  They are thick chopping blocks, made of high quality maple, typically over an inch thick, that will hold up to years of abuse.

Wood is easier on the sharp knives and I use it for almost everything - it is maple, I believe.

BUT, I do keep a J.A. Henckels set for cutting chicken so that I can run it through the sanitizer cycle in my dishwasher. (Yes, I may have just a touch of germophobia!!!)

Fred I have different types of cutting boards including wood, plastic and a cheese cutter made of granite which is really nifty.  It I'm giving a board as a gift I will make sure it also makes a great charcuterie board as many like those these days.

Good old reliable butcher block wood holds up. Plastic, while it performs, eventually from knife cuts may harbor bacteria. Novelty items who knows?

I have both plastic and nice, thick maple and they each have their own purposes. Since they are stored out of sight when not in use, I'm more concerned about function than aesthetics. The stone boards are nice as a decorator touch if your kitchen is done in stone but I would not use them on a daily basis.

We have several cutting boards of different size. All but one fits in the dishwasher. We opt for  function in a cutting board vs. looks. They are stored out ot sight.

I have a fancy wooden one hand made on a stand on the counter. Only once or twice a year I use it- It's too pretty. So I have four colored ones that can be scrubbed or 'dishwashered- Red for red meat, pink for chicken, yellow for fish, big white one for vegetables. The plasticky ones go under counter near the wood one in a vertical drawer with cookie sheets and a wooden cheese tray.

Fred, I have had good service from an oak cutting board made from scraps from a minesweeper from one of the shipyards that dad used to work in.  He took us back to fabulous Door County in Wisconsin and we toured the shipyard and we were each presented with one of these cutting boards.  It has given us 40 years of service, I would have to look up if the cutting board has outlived the minesweepers the scraps came from.

I love wood and use those for serving e.g. cheeses or for cutting bread. Alas, they are not super practical for cutting meats, for example, as the wood can harbour bacteria that may be difficult to get out. Plus, once marred, the wood needs to be re-sanded and oiled (all the time!). Plastic cutting boards are practical, relatively inexpensive, easy to clean and come in a variety of sizes and colors. Once they get "grossed up", they get tossed.

Wood is preferred, as it has antibacterial properties and offers a nice surface for knives.  Plastic ones are easy to throw in the dishwasher but can break down into microplastic in the food .   I have a variety of types and sizes.

Sorry... but I don't do cutting boards (or knives). Personally, I would not appreciate a gift of a cutting board... have plenty of my own. I prefer to give gifts that no one else does.

I really like the look of the one in the picture.  I kept a piece of a tree I had removed for a while thinking of doing something like that.

Plastic is much easier to throw in the dishwasher to clean or to clean between cutting your chicken and then your veggies.  The color-coded ones for different categories (meat, veggies, etc.) are also good for preventing cross contamination.

Wood is the best material for cutting boards.

I use a wooden one that doesn't look nice anymore for veggies and bread, but I use plastic for meat so it can go in the dishwasher.  Wood is easier and better for knives, glass is the worst for knives and plastic in the middle, but I'm not putting meat on my wooden board.
