There is NO way I could choose a favorite. I just love all potatoes cooked in every way.  As ancient as I am I have yet to eat potatoes cooked in a way I did not like. 

A childhood memory that will live with me forever is:

Mashed with gravy made from the oil used to fry chicken and corn mixed in.

My faves are sweet potatoes, red potatoes and gold potatoes. I love making sweet potato fries, or just cooked potatoes with some sort of toppings, or mashed potatoes, or ....  yum.

I feel like I could do a Forrest Gump impression going on about types of potatoes.

 

I like to get the Russet bakers and slice them into wedges.  Coat them in Olive Oil and put some spices on them (varies by what I'm pairing them with or if I'm making them for a snack), then stick them in the air fryer for 15-20 minutes at 400.  Yum!

At one time, scalloped potatoes and rosemary red potatoes were a favorite. Now, I enjoy sweet potato fries, air baked in the counter oven. Crisp, no oil and deee-licious!

Any one except Sweet Potato - I find them to be vile.    I had to do without potatoes of any kind for the past 6 years because of the high potassium count (higher than bananas)  Just recently I've been able to enjoy the odd one and I've been having baby potatoes par boiled, smashed flat and drizzled with olive oil S & P then baked in the oven til crisp on the outside and creamy inside  - heaven!!!

If I had to pick one, boiled red potatoes with melted butter that has fresh parsley in it.  That or German potato salad. Or potato pancakes with apple sauce.  Or fried potatoes made a dozen different ways.  Etc. etc.

Once they are shredded and fried to a crispy texture I couldn't care less which variety of hash browns they are. If they are twice baked the largest russets I can find work for me.

A few years ago I experimented with scalloped potatoes with a recipe that included adding layers of sliced fennel to the dish.  My family did not like the idea, then they tasted the potatoes.  It is now the most requested dish at any of our family dinners.
