I have a great, and easy, Chicken Picatta... it calls for plating on a bed of angel hair pasta, but you certainly don't have to do that. I'm also diabetic, but I do put it on a small amount of angel hair pasta, warmed in butter... not enough to cause a problem, just for a quick taste.
Flatten chicken breasts, with a mallet to about 1/2". You could cut the breasts in half horizontally to cut them into thin breasts if you don't want to pound them.
Season as you like... for me, it's usually just salt and pepper. Pat dry and then dredge in flour on both sides. Don't overdo it. If you want to make them extra crispy, you could dredge in egg, and then flour... but I don't do that.
Heat oil in a skillet (I like to use Peanut Oil... it has a high smoking point and adds a nice flavour. You could also use sunflower or canola oil, too). On medium, and when the oil is hot, place breasts in skillet (don't crowd them too tightly)... should be no more than 4-5 minutes per side, until golden brown.
Before removing from pan, add some capers (they add a nice tang and salt flavour)... no more than 30 seconds or so... just to warm the capers. Remove chicken breasts.
Pour your favourite white wine into the skillet (it does not need to be an expensive wine) and change to "high" while scraping the browned bits off the bottom of the pan with a wooden spoon. Cook until reduced by half, about 2 minutes.
Stir a little lemon juice, water, and butter into the reduced wine mixture; cook and stir continuously to form a thick sauce, about 2 minutes. Reduce heat to low and stir chopped parsley through the sauce. (I like fresh Italian Parsley, if you can find it).
Return chicken breasts to the pan and cook until heated through, 1 to 2 minutes. Serve with sauce spooned over the top, and sliced lemons and some fresh parsley.
If you want a pop of colour you could add some cherry tomatoes cut in half in that final step.

Tammy- I don't know if your mom likes salmon but this is an easy dish:
I mix whatever kinds of mustard I have around...regular, dijon, honey mustard then coat the fish with it. Then dredge the fish in seasoned panko and/or bread crumbs. You can also sprinkle parmesan cheese on it.
Bake in a 400 degree oven for 10-12 minutes.

I am on a similar diet but by choice and I like it. Look into the Keto diet approach for recipe ideas while staying healthy. As for me, I take foods and spice them, marinate, lightly season, bath in tomato sauce and make good use of raw vegetable with either lemon or salad dressing. Olive oil does wonders too. I also BBQ alot and flame broiled anything is a treat

Whole chicken breast on bone
in a bowl: cup panko, 2 teaspoons thyme, 3 finely chopped garlic cloves, teaspoon black pepper, tablespoon of lemon rind, and 1/4 teaspoon salt.

I also use an air fryer which is fast and easy cleanup. Plenty of recipes available. I take chicken thigs or breast, salt/pepper and do 10 min on each side. Very juicy.
Also in a skillet I take onions and all colored peppers along with sliced chicken breast strips with fajita seasoning and melt chess on top. Make a taco or not. easy breezy.
I also use mustard and honey or molasses on chicken in the skillet - oil or butter. Green vege.
You can purchase fish and add the honey on top and bake it - yum😋

OK. Here's one of my favorites, super easy:
Chicken Divan
Cube some chicken breasts.
Cut up broccoli florets to about the same size as the chicken.
Place in bottom of an 8 x 10 ish glass or metal pan, spray with a little cooking spray.
Can of Campbell's Cream of Mushroom Soup, into blender with a little chicken broth for the sauce, just till creamy. Add about 1/2 cup mayo and blend again.
Pour the sauce over the chicken and broccoli .
Grated cheddar cheese over the top of the sauce, cover with foil and bake at 350 for about 45 min till everything is cooked through.
I might (or you could) uncover for the last 15 min baking time and sprinkle with Parmesan or panko to make a crunchy crust on top.
Goes right over rice and delish!
