Since my father passed away last year and Mother is 94 and due to inability to walk on her own, my husband and I are going to prepare a home-made meal and bring it to her and spend the day together celebrating the Resurrection of our Lord and Saviour Jesus Christ. We will probably bake a ham, and instead of scalloped potatoes we will do mashed potatoes (her favorite) and (not including a turkey) all the normal thanksgiving type fixings!

For us, it depends on the weather. If the weather is good, we will do sea scallops and fresh shrimp on the grill with either pasta salad or seven layer spinach salad depending on how much I feel like cooking. If it's not good weather, I sauté the shrimp and scallops in olive oil with fresh garlic and fresh lemon. Then serve with either mashed sweet potatoes or angel hair pasta depending again on how much cooking I want to do. Fresh veggies TBD. I am thinking of making my great aunt's award winning poppyseed cake for dessert.

Ham, potatoes, asparagus, smoked salmon, cucumber relish, Brussels sprouts, squash, mac & cheese, deviled eggs, among other dishes... Crab dip with celery for appetizers and ginger snaps with homemade lemon curd for dessert.
