My one favorite was actually the aunt of a client and he wanted her. And she was so good I've enjoyed working with her since.
My other favorite was requested by one of the worst agents I've ever met. That escrow died, but the escrow officer was super good and I have enjoyed working with her ever since too.
I had the misfortune of working with a truly awful escrow officer many years back who was insisted upon by an investor client. I was so POd at her I went to regional and demanded that they step in. TURNED OUT that the awful escrow officer had been embezzling and committing fraud! She went to jail and is out of the business. The swamp drains itself sometimes . . . LOL

We only have good title companies in my area. There are four of them. I have used all of them. After I was in the business for a while, I did find a favorite. The main title rep in that office treats me like I'm her only client, and I know she's busy. I like that kind of service.

Title: I've known them for decades.
Escrow: I have one that I work with, I was introduced by one of my title reps. I highly recommend them and even write them into my purchase contracts from time to time. They do such a good job, other agents start using them.
Aside from those, title reps out here get all the new listings and reach out to the agents immediately to offer services. There is one out here that will send out a vesting report to all the new listings. Escrow companies usually send out mass emails looking for business.

In this area, the inexperienced escrow officers were all shipping out during the Great Recession. Most I know are experienced and are surviors. Few new faces since it is a high pressued job. A few specialize in commercial, business etc. I never had an issue with any agents. All very skilled and professional.
