I did not know that interesting piece of trivia, Bob.  I saw bacon/maple/onion sauce today when shopping in a specialty store.   Honestly, I don't get the allure of the bacon/maple thing.  LOL

Birch trees also have a sap that is edible.  A little less rewarding than maples, so no-one bothers with them, but it is sweet.  Also, watery --- just like maple sap until you boil it down.

Interesting information. Wonder how it tastes?  Many people are allergic to Boxelder so if you eat the syrup, does that help reduce the allergic reaction?

NO, I did not. I am amazed at the sap that does come out of the maple tree. Imagine our ancestors seeing insects and animals slurping this up and trying it for the first time? Who wouldn't want a grove of trees after that?

Quebec has a very large maple syrup industry.  Some of its neighbouring provinces and states also have a maple syrup industry.  Buy Canadian maple syrup.  It is very very good.
